pineapple salsa smokey shrimp grain bowl

If you follow me then you know I love a meal that packs a big punch in flavor, but it’s fast and easy with simple ingredients. This meal checks all the boxes.

WHAT YOU’LL NEED:

Shrimp:

1 lb medium-small shrimp, peeled and deveined

1 tbsp smoked paprika

1 tbsp paprika

1 tbsp chili powder

1/2 tbsp cumin

1 tbsp salt

2 tbsp honey

juice from half lime

Other ingredients:

Microwave package of quinoa or brown rice (faster) OR cook quinoa in 2 cups chicken bone broth until fluffy

Fresh pineapple cut/cubed or canned pineapple, drained

Black beans, drained, rinsed and warmed

Mango or pineapple salsa

1 Avocado, cubed

Cilantro, roughly chopped

Handful of kale, roughly chopped

Juice of other half from lime

HOW TO MAKE IT:

Combine all the dry ingredients, honey and lime juice with shrimp in a bowl.

Add a little avocado oil to a pan on medium heat.

Add kale and sauté, then transfer to plates.

Using the same pan, add a little more oil and cook shrimp until no longer translucent.

Cook quinoa or rice.

Warm beans.

Chop avocado, cilantro and pineapple, if needed.

Add quinoa/rice, beans and shrimp to plates.

Top with salsa, pineapple, avocado, cilantro and sprinkle of salt.

Squeeze fresh lime juice over the top and serve.
