BBQ Chicken Thigh Grain Bowl
As a certified holistic nutrition, fitness & wellness expert, I’m all about meals that balance flavor and nourishment. While chicken thighs have a bit more fat than breasts, they’re juicier, richer in taste, and perfect for summer grilling (or Instant Pot magic)!
Chicken Thighs (Instant Pot):
💧 Add 1 cup water + trivet
🍗 Add chicken thighs on top of trivet and sprinkle spices mixed together covering chicken (spice blend below)
🔥 Pour over 1 cup BBQ sauce
⏱️ Pressure cook on “Poultry” (~30 mins)
Spice blend:
1 tbsp smoked paprika
1 tsp dry mustard
1 tsp ground cumin
1 tsp garlic powder
¼ tsp cayenne
1 tsp kosher salt
¼ tsp black pepper
Build your bowl. This bowl is easy, satisfying, and packed with whole-food goodness:
✨ Brown rice & quinoa - I used a microwave package to cut time
✨ Shredded cabbage
✨ Black beans - drained and warmed
✨ Jalapeños
✨ Pickled red onions
✨ Corn - fresh or frozen. I used frozen and warmed on the stove.
✨ Fresh cilantro & lime juice
